Super Bowl Appetizers Con Queso Dip Recipes
Ingredients
- 8 Tbsp Butter
- 8 Tbsp Flour
- 1 Cup White Onion – choppped
- 2 Tbsp finely chopped Parsley
- 16 oz. Pepper Jack Cheese – shredded (Do not use store bought pre-shredded cheese! Buy block cheese and shred yourself. Pre-shredded cheese includes flour which makes it gritty.)
- 8 oz. Cheddar Cheese
- 2 Cups Heavy Cream
- 6 Cups Whole Milk
- 4 1/2 Cups Spinach – rough chopped
- 1 Jalapeno – finely diced
- 1 tsp Garlic Powder
- Black Pepper and Celery Salt to taste

Take a 4 quart sauce pan, add butter and melt on med-high heat. Add onions – saute’ until translucent.

Add flour and turn down heat to medium, stirring constantly. This is our Roux.

Cook over medium heat for a few minutes, constantly mixing – do not burn. When you smell a buttery popcorn smell, pull off heat and set aside.
Spinach Con Queso Recipe

Take a medium sauce pan and heat milk and cream on high heat, bring to a simmer for just a few minutes, stirring constantly.

Slowly incorporate a little bit of the milk/cream mixture into the Roux mixture, stirring frequently, while adding a small amount each time, until all incorporated. Simmer for 15 minutes, continually stirring – do not burn.

Shred the Pepper Jack, Cheddar Cheese.

Take off the heat and add a handful at a time to your Roux/Cream mixture, constantly whisking, add a bit more cheese and continue until all cheese is incorporated. Simmer.

Add in 1/2 cup of chicken stock and whisk in slowly. This will thin out your sauce and give it more flavor.

Whisk in the parsley and 1/2 jalapeno and add to your pan. If it is not spicy enough, then you can add your remaining jalapeno. *Reilly’s Tip – When cutting the jalapeno, use gloves! Or, wash your hands THOROUGHLY immediately after dicing. Trust me, I learned the hard way. Don’t touch your eyes or skin.

Add garlic powder, pepper and celery salt. Stir in. If you like it thinner, add additional chicken stock until it is to your liking.

Incorporate the spinach, let sit for 5 minutes and serve!
Serve with your favorite chips or veggies.
This is a crowd favorite for any party, appetizer, sauce etc. Pour it on anything!! There is enough for a crowd or great for leftovers~ Chef Reilly
