Carnitas –  literally meaning “little meats”, is a dish of Mexican cuisine. Carnitas are made by braising or simmering pork in oil or lard until tender. For a Healthier version On The Road Eats is going to use Chicken Stock.

Carnitas takes a hours, and the result is very tender and juicy meat, which is then typically served with Tortillas, Beans, and Salsa.

  • 4 – 7 Lbs Pork Butt Bone In

  • 2 Tbsp On The Road Eats Shawarma Seasoning (Not Traditional, but Oh Yeah does this take Carnitas to a New Level)

  • 3 Tbsp Olive Oil

  • 6 Sprigs Fresh Thyme

  • 6 Sprigs Fresh Rosemary

  • 7 Whole Garlic Cloves

  • 5 Bay Leaves

  • 3 Tsp Cumin

  • 3 Cups Chicken Broth

  • 1 Lime Juice

  • 1 Lemon Juice

Carnitas Recipe Slow Cooker Carnitas Recipe –

Pork carnitas are traditionally made using the heavily marbled, bone in  butt or picnic ham cuts of pork. The large sections are usually cut down to a workable (4 –7 lb) size and seasoned heavily before slow braising or deep frying.

Traditional carnitas are then made by a process of simmering the meat in the lard until tender over a very low heat. Once appropriate tenderness is achieved, the heat is turned up and the outside of the pork begins to crisp.The Carnitas can then be used as an ingredient in bowls, tacos, burritos and more. The uses for Carnitas are Endless!
