Eggs Benedict Recipes Healthy Breakfast Ideas

Light Eggs Benedict with grilled tomato, spinach, polenta and low fat Hollandaise
Serves 2

Turkey sausage  Eggs Benedict with English muffin, egg and low fat Hollandaise
Serves 2

Low Fat Hollandaise

  • 1 Cup fat free plain yogurt
  • 2 tsp lemon juice
  • 3 egg yolks
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon Dijon mustard
  • 1 pinch fresh ground pepper
  • 1/2 Tbsp fresh dill
  • 1/2 Tbsp fresh parsley for garnish

Light Eggs Benedict

  • 1 1/2 Cups Spinach
  • 2 large slices Large Tomato
  • 4 1/2 inch slices of browned Polenta (see recipe here)
  • 1 tablespoon extra virgin olive oil (EVOO)
  • 4 Eggs
  • 2 teaspoon Apple Cider Vinegar
  • 2 English Muffins
  • 8 0z Turkey Sausage

Low Fat Hollandaise Sauce:

  1. In an metal bowl, thoroughly beat yogurt, lemon juice, and egg yolks. Place metal bowl on top of sauce pan with boiling water (double boiler).
  2. Heat over approximately 1″ simmering water, stirring frequently, for 15 minutes, or until sauce has thickened.
  3. Stir in Dijon (starting with 1 teaspoon),  salt, pepper and dill. Taste and add additional Dijon, salt, pepper and if desired.

Cooking the Eggs

Fill a deep & wide pot (deep enough to cover the pot lid) with about 3 inches of water, add 1 tsp white vinegar to the water, bring to a boil and reduce to a   low simmer.

Crack 1 egg into a ladle, pour egg from ladle and slowly drop into the pot of simmering water.  Poach the eggs for 2-3 minutes or until the egg whites are cooked through. Take a small wok sized strainer and take out eggs, set on a plate with paper towel to drain water.

Sauté the Spinach

Heat sauté pan and 1/2 tablespoon EVOO med-high heat. Wilt spinach and set aside

Grill the Veggies & Turkey Sausage

Heat grill to med-high heat. Add turkey sausage to grill each side until perfect grill marks.

While the turkey sausage is grilling, fill a medium to large saucepan with 1-1/2 to 2 inch

Remove turkey sausage from grill. Add tomato slices and grill about 1 minute each side, to give grill flavor and grill marks.

Brown the Polenta

Heat flat pan with 1/2 tablespoon EVOO to med-high heat. Add the sliced polenta and brown both sides.

Eggs Benedict Recipe Healthy Hollandaise Assembly:

Take 2 slices polenta and add to plate . Top with a handful of spinach, followed by a tomato slice, and a poached egg. Drizzle with fat free Hollandaise sauce. Sprinkle with additional salt, pepper, and paprika. Serve immediately.

For the less lite option (but still healthy):

English Muffins

Using a flat pan on stove, add 1 tsp olive oil to a pan and heat on med-high. Arrange the English muffin halves on pan.  Cook until toasted and lightly golden, about 8 minutes.  Set aside English muffins and turkey sausage until eggs are poached and ready to assemble.

Take half slice of english muffin, and add to plate . Top with turkey sausage slices,  followed a poached egg. Drizzle with fat free Hollandaise sauce. Sprinkle with additional salt, pepper, and parsley. Serve immediately.
