A great recipe for a Healthy twist on the ‘old standby’ tacos!

Tacos

- 1 lb. Lean Ground Turkey
- 2 tsp Olive Oil
- 2 Tbsp On The Road Eats Southwest Seasoning
- Salt and Pepper to taste
- 1 Small Cabbage – Cut ends off and peel layers to use as shells
- 1/2 Cup sliced Grape Tomatoes
- Garlic sauce (see recipe below)
Beans
- 15 oz. Black Beans
- 1/2 Cup chopped Green Onions
- 1 tsp Olive Oil
- 2 Tbsp diced Green Chilies
- 1/4 Cup diced Yellow Pepper
- Salt and Pepper to taste (Yes, this is redundant, but true!)
1. Heat 2 tsp Olive Oil in saute’ pan on med-high heat, add ground turkey and brown, stirring occasionally.

2. Half way though browning the turkey, add On The Road Eats Southwest Seasoning
3. When turkey is browned, remove from heat and set aside.
It’s BEAN time!

4. Add 1 tsp Olive Oil in a sauce pan on med-high heat, along with Green Onions, Green Chilies, diced Yellow Peppers and saute’ for two to three minutes. Then add 15 oz. Black Beans. Heat through.

Cabbage Time!

Wash and cut the cabbage in half!

Core the Cabbage!

Take the core out of the cabbage!

Cut the top of the cabbage!

Making a Taco shape!
5. Take the small head of cabbage and cut off the end. Slice head in half, cutting out the core. Peel cabbage into taco size shells.
6. Add taco meat, tomatoes, and garlic sauce. Hot sauce optional (but you know I can’t get enough of my Texas Pete’s)
7. Top with Garlic Sauce and sprinkle with cheese.
8. Serve with the of Black Beans in a can, and Enjoy!
