Polenta Recipes Tri-Bean Recipe Healthy Dinner Ideas – As it is known today, polenta derives from earlier forms of grain mush, commonly eaten since Roman times. Before the introduction of corn (maize) from America in the 16th century, polenta was made with such starchy ingredients as farro, chestnut flour, millet, spelt, and chickpeas.

Polenta has a creamy texture due to the gelatinization of starch in the grain. However, its consistency may not be completely homogeneous if a coarse grind or hard grain.

  • 1 Cup large dice Tomatoes
  • Tri-Colored Beans
  • 1/2 Cup large dice Green Onions
  • 1 Cup large chop Asparagus
  • 3 Cloves Garlic chopped
  • 3 Cups Spinach
  • 18 oz. Polenta sliced 2 in. thick
  • 2 Tbsp Pesto
  • 1 14 oz. Can Vegetable Broth

1. Heat up vegetable broth in sauce pan on med heat.

2. In a separate pan Take 2 tsp Olive Oil. Saute’ garlic, onions, tomatoes and asparagus for 2-3 minutes.

3. Add the drained Tri-Beans to the pan and heat through.

4. Take a flat surface pan and add 2 tsp olive oil, brown polenta.

5. In a separate saute’ pan heat 1 tsp olive oil and add spinach. Cook about 2 minutes tops.

Tri Bean Polenta Plate

Take your plate, add a layer of beans, onions tomatoes and garlic. Top with one slice of polenta.

Tri Bean Polenta Pesto

Add pesto and spinach on top. Repeat for three layers.

Tri Bean Polenta Vegetable Stock

Finish off with vegetable stock, sprinkle with sea salt and pepper and serve.
