This combination of fresh veggies and Polenta is perfect for a light Italian fare. But wait….this isn’t just for dinner this is a GREAT APPETIZER!

Polenta Recipes Marinara Vegetables Vegan Recipes

Sautéed Vegetables

  • 2 Cups Broccoli florets
  • 2 Cups Yellow Squash, large chop
  • 2 Cups chopped Kale
  • 2 Cups sliced Tri-Colored Peppers
  • 3 Cloves Garlic, chopped
  • 1/2 Cup large diced onions
  • 2 Tbs. Olive Oil

Fresh Marinara

  • 7 oz. Diced Tomatoes
  • 1/2 Onion medium dice
  • 3 cloves Minced garlic
  • 1 tsp Oregano
  • 2 tsp fresh Basil
  • 1/2 tsp Seasonello Bologna Herbal Salt
  • 1/2 tsp Pepper

Garnish

  • Kalamata Olives
  • Balsamic Reduction

Polenta

  • 18 oz. Polenta  – sliced 2 inches thick
  • 1 1/2 Tbsp. Olive Oil

You can make it on your own, or you can buy it pre-made.

Polenta Recipe Marinara Sauce Vegan Recipes

Mix fresh marinara ingredients, add to bowl and mix together. Set aside.

In a separate pan, add 2 Tbsp olive oil, onions and garlic, saute’ 1 minute. Add the rest of the vegetables. Saute’ about 3 minutes on med-high heat until onions are translucent.

Add marinara sauce to vegetable pan, turn heat to low and simmer for 5 minutes.

Heat 1 1/2 Tbsp. olive oil in pan med-high heat, about 5 minutes on each side.  Flip and cook until both sides are crispy. They might not be completely browned, but should be crispy.

Plate Polenta and top  marinara sauce. Garnish with sliced Kalamata Olives and Balsamic Reduction. Serve as a side or by itself! Oooh Yeaaah!
