Lobster Recipes Healthy Spaghetti Recipe – Not your typical lobster spaghetti, adding the protein packed edamame noodles, lime juice and olive oil puts a healthy spin on this Classic Spaghetti Dinner! Super Easy and Good, why go out when you can cook like a chef at home!

Lobster Recipes Healthy Spaghetti Recipe

Ingredients:

10 oz. Edamame Spaghetti noodles
4 Lobster Tails – or 1 1/2 lbs of Lobster
1 1/2 Cups White Wine
3 Tbsp Olive Oil
1 Fresh Lime, cut in quarters, for juice
1 Tbsp Garlic, rough chopped
3 Tbsp Parsley, finely chopped
2 Tbsp Shallots, chopped
1/2 tsp Sea Salt
1/2 tsp Black Pepper
Capers and Chives for garnish

Salad Ingredients: You can add any salad to the Lobster Spaghetti or you can make my Tulip Tomatoes Salad

Add 3 Tbsp olive oil to pan on med-high heat, saute’ lobster tails in pan until lobster is cooked.

Do not overcook because it will get rubbery. Take lobster out of pan and set aside.

Incorporate an additional 1/4 Tbsp of Olive oil to the pan, add your garlic and shallots, and saute’ until shallots are translucent, about 2 minutes, and de-glaze with white wine. Add the parsley and let simmer for 5 minutes.

In a separate pan, add 1 quart of water and bring to a boil, add edamame pasta and cook until al dente, about 4 to 5 minutes. When pasta is cooked, drain, rinse, cool and set aside.

While pasta is cooking, take lobster meat out of shells and cut into large chunks.

Get out a salad plate, add arugula, sprinkle 1/4 tsp olive oil and drizzle with 1/4 tsp balsamic vinegar. Top with your Tulip Tomatoes.

Right before plating, add Lobster, salt and pepper to the saute’ pan. Add 1/4 serving of pasta to your plate. Top with Lobster and sauce, and sprinkle with lime juice. Garnish with Chives and Capers!
