
Knuckle Chicken
Knuckle Chicken is made by using (Yep you guessed it… your Knuckles) to tenderize the chicken. Now, no need to PUNCH or OBLITERATE your Chicken breast, but use your knuckles to flatten and break apart the protein. Give it some love as you will love this dish!
Knuckle Chicken
For this recipe, you will need the following:
- 3 Med to Large Chicken Breasts
- 6 Tbsp Olive Oil
- 4 Garlic Cloves Peeled and Sliced
- 1/2 Cup onion diced
- 7 oz chicken stock
- 3 stocks of Green Onion Diced
- 1 bunch asparagus cut into thirds
- 15 oz white beans
- Parmesan cheese, finely grated
- Salt and pepper
1. Heat 4 tbsp. of olive oil in a sauté pan that will accommodate 3 chicken breasts and oven safe on Med High heat
2. Salt and Pepper each side of the Knuckled Chicken breast add to the pan and brown each side.
3. When browned, take the breast out of the pan and set aside. (The chicken will NOT be fully cooked at this stage and that is what we want)
4. Add 2 Tbsp. olive oil to the hot pan and sauté the garlic and white onions until translucent.
5. De glaze with the chicken stock and make sure to get the goodness off the bottom of the sauté pan.
Knuckle Chicken
6. Add the chicken breasts back to the pan and place in your pre heated oven at 400 degrees. Cook in the oven until the chicken breast has an internal temperature of 165 degrees.
7. Take out of the oven and set the chicken breasts aside on a cutting board while you finish the sauce.
7. Take your white beans, green onion and asparagus and add to your sauce over med heat.
8. This will only take a minute as the asparagus will cook fast and we want it al dente to serve.
9. Slice the breast into strips (not all the way through the back so you can fan it out for presentation).
Sprinkle with finely grated Parmesan cheese for some extra kick and serve!
