Know Your Knives
As I mentioned in the post Kitchen Knives Every Home Cook Needs, knives are one of the most important
tools in the kitchen. The preparation of a meal inevitably includes chopping, slicing, and dicing at one point.
So what are the benefits of knowing your knives?
Furthermore using the correct knife for the task can actually affect flavor. Think of the different between chopped and
squashed tomatoes! The wrong knife, or a dull knife, can lead to unnecessary damage to the structure of an
ingredient, and ultimately affect the flavor and presentation of a meal.
If you don’t have the budget for a whole knife set it is worth doing the research and investing in what you’ll
be using the most. For most people, that will be a Chefs Knife. Quality is always a must with knives, and
learning to hone and sharpen yourself will mean that you can take care of your investment and build your
collection along with your cooking skills.
Check out the Know Your Knives Chart below for a quick rundown on kitchen knives!

So make sure to keep your Chef knife sharp at all times, using your Honing Steel and taking it to be professionally sharpened when getting dull. Make sure to take care of your knifes and they will take care of you. I have a few knifes that are over 20 years old and still sharp, clean and use them daily. Remember a Sharp knife is always safer than a dull knife.
