Chef’s Knife – of course my go to almost every time. Among the most versatile knives, this is the knife you’ll use daily for chopping, slicing, dicing and mincing. Chef’s knives come in blade lengths of 6, 8, 10, and 12 inches.

Longer blades can be more difficult to control, but make for faster cuts. Shorter blades allow for greater control, and are generally suited to chefs with small hands. I go with the 10-12 inch which in my opinion makes the knife more versatile and officiant!

Boning Knife – The boning knife is an ideal kitchen knife for removing meat from bones and cutting fish or poultry. Boning knives can have different widths of blades as well as varying stiffness. The curve of the blade offers greater control when making precise cuts.

Carving and Slicing Knifes – Carving and slicing knives are generally used for slicing meats. These knives usually have long blades that allow for cleaner cuts. I use  the roast beef slicer that has a round tip for all my slicing and carving needs. Knives can be 8 to 14 inches long, and have thinner blades than chef’s knives.

Serrated Knife – an all purpose knife you can use to cut meat, veggies, and almost anything. You can slice, dice and chop with it to. If you get a good one, they stay sharp for many uses and can be sharpened.

Utility Knife – Smaller than a chef’s knife but larger than a paring knife, this versatile knife excels at everyday tasks, from cutting sandwiches to slicing meat. You can also use this for larger fruit.

Paring Kinfe – This indispensable knife is handy for smaller precision tasks like peeling, trimming and slicing small fruits and vegetables to. Get comfotable with this and get creative making tomato roses and carrot tulips among other garnish ideas.

Bread Knife – A serrated bread knife cuts soft, fresh loaves without squashing or tearing. It’s also great for cutting tomatoes and citrus

Meat Cleaver – Use this heavyweight cleaver to cut through meat and poultry bones with a single downward stroke, or to slice through firm vegetables. I love using my cleaver to crush garlic flat side down. Makes peeling the garlic bulb easy!

Kitchen Shears – You’ll find myriad uses for kitchen shears, from trimming pastry dough and snipping herbs to cutting twine and parchment paper. A must have as you will be using this for things you never thought about.

Honing Steel – Essential for honing your knives so they stay sharp longer between sharpenings. The steel smoothes and realigns the worn carbon steel on the blade’s edge. I use mine almost all the time as the a sharp knife is a safe knife.

Steak Knifes – Serrated or straight-edge, steak knives, to be used with steak or other heartier meats, are the only sharp cutlery that are part of a place setting. I have eaten at friends houses with butter knifes and guess what they get for Christmas! Once you get a good set of steak knives you will never go back!

Kitchen knives every home cook needs – There are many brands and kinds of kitchen knifes out there and I have used them all. I will never go for the CHEAP SET of knifes as they just don’t last, stay sharp and even rust. I have had knifes that just aren’t comfortable when I cut as the handles are different sizes, shapes. So when you go get your first Chef knife or replace your old one, go and look at all the different brands. Put them in in your hand and feel it, the weight, grip and size.

Make sure to keep your Chef knife sharp at all times, using your Honing Steel and taking it to be professionally sharpened when getting dull. Make sure to take care of your knifes and they will take care of you. I have a few knifes that are over 20 years old and still sharp, clean and use them daily. Remember a Sharp knife is always safer than a dull knife.
