So you might think smoking meat is a job for the professionals with all the Equipment and knowledge, right!! Think again…you can smoke country style ribs (or any ribs) like a pro and CHEAP!

Ingredients

  • 5 Lbs country style ribs
  • 4 Tbsp BBQ rub (I love making my own, but your choice) you can add more if you like
  • 1 Tbs Sea Salt
  • Mesquite Charcoal Briquettes
  • Mesquite Charcoal
  • Hickory BBQ Smoking Chips (soaked in water)
  • 1 Cup of your favorite BBQ Sauce – Make your own, Check out My Whiskey BBQ SAUCE RECIPE
  • Smoker, you can go big or inexpensive (I like the Brinkmann Smoke ‘N Grill

Here is an easy and fool proof way of smoking ribs with ingredients and equipment you won’t have to take a mortgage loan on.

  1. Add Charcoal to your Smoker. I use Sonora Charcoal Mesquite Charcoal, and Kingsford Mesquite Charcoal Briquettes for my smoking heat. (You can use your own combination.)
  2. Light the smoker and let heat up for 15 minutes.

      3. Take your Country Style Ribs and dry rub with Stubb’s BBQ Spice Rub. (Or use your own rib rub) and add Sea Salt.

4. Once your smoker is up to temp, place your Country Style Ribs and smoke for 3 1/2 hours.

Kale Cabbage Coleslaw

Ingredients:

3/4 Cup Julienne Red Bell Pepper
2 Cups Kale
1/4 Cup Parsley
2 Cups Green Cabbage
2 Cups Purple Cabbage
2 tsp Fresh Dill
3 Tbsp Wine Vinegar
3 Tbsp Low Fat Yogurt
1 tsp Celery Salt
1 tsp Black Pepper

5. Mix the vinegar, yogurt, parsley, salt and pepper in a small bowl. Mix remaining ingredients in a large bowl, then add your dressing. Mix thoroughly. Cover and put in refrigerator for 30 minutes, then serve.

7. Add the (soaked smoke chips) to the coals and let the AWESOME SMOKE flavor the ribs. Keep adding the chips every 1/2 hour.

6. After 3 1/2 hours, take your BBQ sauce and brush the ribs (still on the smoker) until fully coated. Turn ribs after 5 minutes, coat with sauce, turn and brush again. Continue every 5 minutes until the sauce is coated and baked on the ribs.

7. Place ribs in an oven safe pan, add 1/2 Cup chicken stock, cover pan with Saran wrap, then cover with aluminum foil. Put in oven at 350 degrees and bake for 20 minutes. This step is to finish off the ribs and make it fork tender with an awesome smoke flavor!

8. Take ribs out of oven, and serve with your favorite coleslaw, baked beans or side dish.
