Heat the oil in a very large pot over medium heat. Add the onion, leek, celery and saute’ until the onion is translucent, about 10 minutes. Add the garlic and parsley, red pepper flakes, and white wine, and saute’ 2 minutes.
Add crushed tomatoes, fish stock and clam juice. Cover and bring to a simmer. Reduce the heat to medium-low. Cover and simmer until the flavors are blended, about 30 minutes. Add thyme, basil and Old Bay Seasoning to the stew. Simmer and add clams and mussels.

Cover and cook until the clams and mussels begin to open, about 6 minutes. Add the shrimp and lobster. Simmer gently until the shrimp and lobster are just cooked through, and the clams are completely open, stirring gently, about 5 minutes longer.
*You can add pieces of firm fish, but when Lobster and/or Crab Legs are on sale, go ahead and substitute! Or if you prefer salmon, go for it! If you don’t want it too fishy, substitute the Fish Stock with Chicken Broth.
* Chef Reilly’s Tip – Any Clams or Mussels that do not open up, Discard!

Season the seafood stew to taste, adding additional red pepper flakes and Old Bay seasoning. Place stew into bowls and serve. And don’t forget the garlic bread!
