
Chorizo Irish Nachos and Eggs

Chorizo Irish Nachos and Eggs
You will need:
- 2 Cups shredded Cheddar and Monterrey cheese, mixed
- 1/2 Cup chopped Green Onions
- 8 Eggs
- 4 Tbs. Olive Oil
- 3/4 Cup cooked Beef Chorizo
- 1 pound of cut fries – fresh or frozen, thin or thick
- 8 slices Thick Bacon – can be substituted with Turkey Bacon (Large chop or leave whole.)
- Texas Pete Hot Sauce
1. Start by baking or deep frying your fries, until cooked. You can use thin or thick cut, I prefer the thick cut fries.
2. After fries are fully cooked, put on a sheet pan, starting with 1/4 of the fries stacked, then add 1/4 of the cheese mixture on top. Repeat in layers, using all of the fries and cheese mixture. Put in oven at 350 degrees until cheese is melted.

3. While fries are in the oven, put 1 Tbls. Olive Oil in saute’ pan and cook your eggs to your liking. Medium well, over medium, or sunny side up!
4. Remove fries from oven and put 1/4 of the Irish Nachos on a plate. Top with 1/4 of the beef chorizo, green onions, and bacon. (You can eat these alone or with your favorite eggs)
5. Add the two eggs on the plate and enjoy! Add your favorite Hot Sauce or Sour Cream and enjoy!
