Chicken Sausage Kale Recipes Dinner Ideas

For this recipe, you will need the following: Cooking for a family of 4 Double the Recipe!

• 1 lb spicy chicken sausage
• 1 cup Orecchiette pasta
• 6 oz whole baby Portobello mushrooms, sliced
• 2 cups fresh Roma tomatoes, diced
• 1/2 cup fresh parsley, finely chopped
• 4 cups fresh kale, chopped
• 3 tbsp fresh garlic, sliced
• 1 cup chicken stock,
• 1 cup white wine
• 6 tbsp olive oil, separated into 4 tbsp and 2 tbsp
• Parmesan cheese, finely grated
• Salt and pepper to taste

Bring 6 cups of water to a boil in a pot. While boiling, add 1 cup of Orecchiette pasta and bring heat to medium. Then let the pasta cook for 10 minutes or until al dente. Drain, Cool and Set Aside!

In a saute pan, saute the spicy chicken sausage until brown and then set aside.

In a separate saute pan, add 4 tbsp of olive oil, garlic & mushrooms, then saute on medium heat for 3 minutes until the garlic is translucent.

Add kale, cooked sausage & parsley and saute for about 3 minutes. Add chicken stock, white wine, tomatoes and turn to low heat. Simmer together, for about 8-10 minutes. Salt & pepper to taste.

Add Orecchiette Pasta to the saute pan and stir until heated through.
