Dinner for 2 just got super easy and super good! This recipe takes less than 45 minutes to prepare and is better than any store bought quick meal! Could be a staple for that gourmet night in!
Chicken Recipes Chicken Basil Goat Cheese Dinner Ideas
Ingredients:
- 2 Chicken Breasts –
- 2 Oz Goat Cheese
- 10 Fresh Basil Leaves
- 1 Bunch Baby Broccoli
- 4 Cloves Garlic – Sliced
- 2 Tbsp Chopped Scallions
- 2 Tbsp Sun Dried Tomatoes
- Salt and Pepper to taste
- 1.5 Oz Chicken Demi-Glace
- 1 Cup Chicken Stock
- 3 Tbsp Olive Oil
Take the chicken breasts and cover them in suran wrap. Tenderize the chicken and flatten them out.
Proceed to salt and pepper both sides of the chicken breast.
Divide the goat cheese and basil and spread over both chicken breasts.
Role the chicken breasts, and over lap.
Set oven at 425 degrees. Heat skillet, add 1 1/2 Tbsp olive oil and brown both sides of the chicken breast on Med-Hi heat.
Next, place the chicken breasts in the oven and roast for 30 minutes or until 160 degrees…Take the chicken breasts out and let rest until internal temperature reaches 165 degrees, about 5-10 minutes.
While chicken is resting, heat same skillet on Med heat and saute’ scallions, sun dried tomatoes and 1/2 tbsp olive oil in the pan drippings from the roasted chicken for 3 minutes.
De-glaze with 1 cup chicken stock and reduce by half.
Take Demi-Glace and add to the chicken stock, stir and simmer for 5 minutes.

Next Saute’ garlic in 1 Tbsp olive oil for 3 minutes…
Time to add the Baby Broccoli, (Sea Salt & Pepper to taste) and saute’ for 4 minutes, or until your liking of broccoli consistency.
Plate the chicken breast and smother with the Demi-Glace Sauce and enjoy! An easy and good weeknight meal for 2.
