Ingredients:

  • 2 Chicken Breasts – Bone-in
  • 5 Baby Portabella Mushrooms – quartered
  • 1 Bunch Baby Broccoli
  • 4 Cloves Garlic – Sliced
  • 2 Tbsp Shallot – Finely Diced
  • 1  1/2 tsp Fresh Thyme – Finely Chopped
  • Salt and Pepper to taste
  • 1 Tbsp Pesto
  • 3 Tbsp Sun Dried Tomatoes – Diced and in oil  (Buy them in oil or reconstitute them in oil. Keep the extra oil and add at the end.)
  • 1 1/2 Cup White Wine
  • 2 1/2 Tbsp Olive Oil

Set oven at 425 degrees. Heat skillet, add 1 1/2 Tbsp olive oil and brown both sides of the chicken breast on Med-Hi heat.
