Chicken Mozzarella Prosciutto Recipe – Chicken, Check. Mozzarella Check. Now to make it ROCK Prosciutto CHECK! An easy, super good entrée with some green, that will leave you speechless!
Chicken Mozzarella Prosciutto Recipe
Ingredients:
- 3 Tbsp Olive Oil
- 2 Chicken breasts – butterflied and tenderized (flattened)
- 1 14.5 oz Can diced tomatoes
- 4 slices Prosciutto
- 8 oz fresh Buffalo Mozzarella cheese
- 1 Tbsp fresh sliced Garlic
- 2 Tbsp Fresh chopped Basil
- 1/4 Cup Chicken stock
- Salt and Pepper

Chicken Mozzarella Prosciutto Recipe – Take the chicken breast and lay them out on your MEAT cutting board. Put a piece of saran wrap over the breast and tenderize with a meat hammer. You don’t want to smash them, just thin them out a little bit!
Salt and Pepper both sides of the chicken breast.

Heat 2 Tbsp of Olive oil in a large saute’ pan on med-high heat, add chicken breasts and brown each side, about 1 to 2 minutes per side. When browned, take off heat and set aside.
Set oven to 400 degrees.

Add the remaining 1 Tbsp to the same saute’ pan, add garlic and saute’ for about 1 1/2 minutes until translucent. Add tomatoes. Simmer for 2 minutes. Remove from heat.

Use a cutting board and lay out a slice of Prosciutto. Add browned chicken breast to the slice of Prosciutto. Top with Mozzarella cheese and chopped Basil and wrap. As you roll them up and place them in the pan, put the seam of the wrapped prosciutto down to hold it all in place.

Place in oven at 400 degrees for 15 minutes…Add broccoli and crank up the oven to 450 degrees.
Put back into oven for another 10 minutes (We like crunchy broccoli). If you like the broccoli a bit softer, add more time. And until chicken is 165 degrees and the prosciutto has some color.

Plate and serve your Chicken Mozz Prosciutto
