For this recipe, you will need the following:
Chili
- 2 lbs. Chicken Sausage – You can use hot or mild sausage. I prefer 1 lb. hot with 1 lb. mild, to give it just enough kick.
- 3 Tbsp Beef Chorizo
- 3 (15 oz.) cans Chili Beans (If you don’t want to make your own, I recommend S&W Premium Chili Beans)
- 42 oz. Diced Tomatoes
- 8 oz. Tomato Sauce
- 8 Garlic Cloves, minced
- 2 Cups chopped Carrots
- 2 Cups chopped Yellow Onion
- 1 Cup chopped Celery
- 1 Cup chopped Green Onions
- 1 chopped Green Bell Pepper
- 1/2 Cup Red Wine
- 3 Tbsp Chili Powder
- 2 Tbsp Ground Cumin
- 1 tsp. Pepper – to taste
- 1 tsp. Sea Salt – to taste
- 1 tsp. Thyme
- 1 tsp. Oregano
- 1 tsp. Arizona Hatch (by Anthony Spices) – if you want it hotter, add 2 tsp.
- 2 Tbsp Brown Sugar
- 4 Tbps Olive Oil
- 1 Cup shredded Cheddar and Mozzarella Cheese
- 4 Bread Bowls
1. Take 2 Tbsp Olive Oil, and saute’ 2 lbs. chicken sausage. Once it is browned, set aside, but do not drain the juices. This adds extra flavor!

2. Take 2 Tbsp Olive Oil and saute’ the vegetables and the garlic. Saute’ until the yellow onions are translucent, med-high heat, stirring not to burn, about 4-5 minutes.
3. De-glaze with 1/2 Cup of wine and bring to a boil, med-high heat, to reduce by half. About 4 minutes.

4. Add the chicken sausage with juices, chorizo, tomatoes, tomato sauce, herbs, spices and brown sugar. Turn down heat to medium, cover and simmer for 20 minutes, stirring occasionally.

5. Add the chili beans, salt and pepper to the chili mixture, simmer an additional 10 minutes.

While the ingredients are simmering, prepare the bread bowls and garlic bread.

Bread Bowls / Garlic Bread
- 4 Bread Bowls (You can make your own, or go to any supermarket bakery. I get the rosemary sourdough blend. This gives it an extra flavor.)
- 4 Tbsp Softened Butter
- 4 Garlic Cloves Minced
- 4 Tbsp Sour Cream
- 1 1/4 Cup Shredded Cheddar Cheese
6. Heat oven to a broil, 500 degrees.
7. Cut off the top of the bread bowl and hollow out the inside, in one big chunk. Take the chunk of bread and slice into 4ths. Save the top ‘lid’ for presentation.
8. Combine softened butter and garlic, stir until blended.

9. Spread the butter mixture on to each slice of bread, as well as the lids.
11. Heat up a skillet on stove top, and brown your garlic bread, on both sides, and you can brown the lids as well.

12. Take your hollowed out bread bowls and sprinkle cheddar cheese , spreading out evenly, about 1/4 Cup per bowl. (Save the left over 1/4 Cup for garnish.)

13. Place bread bowls on baking sheet and place in oven to broil, about 3 minutes, until cheese is melted and bread is golden brown.

14. Remove from oven, add chili mixture to each bread bowl. Top with sour cream and shredded cheddar cheese for garnish.
