Corned Beef Baker Recipe

St. Patrick’s Day has come and gone but this recipe is great for any time of the year! Bring out your inner Irishman (or lady) with Chef Reilly’s Corned Beef Baker!

For this recipe, you will need the following ingredients:

  • 8 oz shaved corned beef

  • 2 large russet bakers (potatoes)

  • 1 stalk of broccoli

  • 1 cup of shredded sharp cheddar

  • ½ cup bacon (cooked)

  • ¼ cup of melted butter

  • 1 teaspoon of Season All Salt

 

Directions:

  1. Rinse the bakers (potatoes) and poke with a fork a few times on the top of the potatoes.
  2. Preheat oven to 350 degrees.
  3. Roast directly on the rack for 60 to 70 minutes until soft.
  4. Cut the broccoli up to your liking and boil in water for 3-4 minutes draining water after done.
  5. Saute the corned beef over medium heat for 5-6 minutes until heated through
  6. Be careful- HOT POTATO! Take the potatoes, cut them in half, and add the broccoli, bacon, season all salt, melted butter and cheddar cheese. Top it off with the corned beef.
  7. Place back on a baking sheet in the oven for 5-8 minutes until cheese is melted.
  8. Ready to go or you can serve with sour cream, salsa or cheese sauce.
