Ingredients:
Carne Asada & Chicken Bistec:
- 1 Lb Bistec De Pollo (Marinated)
- 1 Lb Carne Asada (Marinated)
Salsa Fresca
- 3 Roma Tomatoes
- 2 Green Onions
- 1 Tbsp Cilantro
- 1/2 Onion chopped
- 1 1/2 tsp Cumin
- 1/2 tsp Ground Pepper
- 1/2 tsp Celery Salt
- 1/2 tsp Ground Cayenne Pepper
- 1/2 tsp Clasico Seasoning
- 1 Lime Fresh Squeezed Juice
- 1 Small Jalapeño
Beans
- 1 Bag Dona Panchita Beans
- Queso Cotija for Garnish on Beans and Tacos

1 Bag (or 2 Cans) Re-Fried Beans, you cam make your own but Dona Panchita ROCK (and I don’t name drop too often).

Salsa Time:

De-Seed the Roma Tomatoes

Finely dice the tomatoes and place in a mixing bowl. Some like large dice, but the smaller the better for myaAsada tacos or burritos.

Finely Chop the Onions, Cilantro, Green Onions, Jalapenos, and add spices to the mixing bowl.

Add the lime juice, cover and refrigerate for at least 1 hour. This will let all those flavors combine and make this Salsa Fresca Rock!

Take the Dona Panchita Beans and Heat them up in a sauce pan. I always add a little chicken or vegetable stock to thin out the beans.

While the beans are heating up, set your grill to Med-Hi and get GRILLING! I begin grilling the chicken first (the chicken takes a little longer to cook through).

Then the Carne (Beef). Keep all that delicious marinade on while grilling. OH MAN!

Once Cooked, pull off the grill and let rest on a cutting board until you are ready to cut. Make sure the chicken is 165 (cooked) degrees before cutting.

Slice the Carne and Chicken and serve Family Style with the Salsa Fresca and Beans! That Easy and That Good! Sprinkle some fresh Queso Cotija over the beans for garnish!
