Best Potato Salad Recipes Egg Salad Recipes
This recipe has been handed down by generations, and is the Jerry Brue Secret Potato Egg Salad Recipe! Rebecca requests it every year on her birthday, and finally got the recipe to make my own. Rebecca’s Dad calls it “Potato Salad”, but there are more eggs than potatoes, so you can call it whatever you want. I call it DELICIOUS, and so will you!

Ingredients:
- 12 Hard Boiled Eggs (see my boiling tips below)
- 1 Can Whole Potatoes (don’t buy the sliced, it won’t taste the same)
- 3/4 Cup Mayonnaise
- 3 Tbsp Finely Chopped Yellow Onion
- 2 Tbsp Yellow Mustard
- 3 tsp Salt
- 3 tsp Pepper
- 1 tsp Paprika
Place 12 eggs in a pot and add water, enough to cover the eggs. Bring water to a boil. Boil eggs for 5 minutes. Cover pot and take off of heat, set timer for 12 minutes. After 12 minutes, place eggs in bowl of ice water for several minutes. Peel and set aside.
Now it’s time to slice the eggs. Set aside 3 eggs for garnish. Take an egg slicer and slice the remaining 9 eggs sideways, turn and slice longways. Place eggs in a bowl.
Take your whole canned potatoes and slice each one sideways, turn and slice longways. Add to bowl with eggs.
Add the finely chopped onions to the same bowl. Hint: finely chopping the onions gives it the perfect flavor of onion without overpowering.

Add mustard and mayonnaise.
Add salt and pepper, and stir until all incorporated. Place bowl in refrigerator and let set for at least 20 minutes. The longer, the better!
Place potato egg salad mixture on a serving dish. Take your remaining 3 whole eggs and slice sideways to make your garnish. Place eggs on top of potato salad mixture and garnish with paprika.
I should put a warning with this dish, because it is super easy, but super addictive and delicious. Your guests will request you bring it to every holiday party, and your family will request it on special occasions. Perfect side dish for holidays or summer gatherings, this is a one of my favorites.
