BBQ Chicken Recipe Smoked Chicken Recipes – Chicken, Check. Grill Check. Fun Check! An easy, super good and fun way to Smoke Chicken like a Pit Master!

BBQ Chicken Recipe Smoked Chicken Recipes
Ingredients:
- 4 chicken quarters – skin on
- 4 chicken breasts – skin on
- Charcoal
- Weber Grill (or any charcoal grill or smoker)
- Favorite BBQ sauce or make your own
- Pickle Chips
- 5 or more Whole Corncobs
- SUN, FUN AND BBQ
Chicken Rub Recipe:
- 1 1/2 tablespoons Sea Salt
- 1 Tablespoon Celery Salt
- 1 Tablespoon Black Pepper
- 2 teaspoons Oregano
- 2 teaspoons Thyme
- 1 teaspoon Mustard Powder
- 1 1/2 Tablespoon Garlic Powder
- 2 teaspoons Onion Powder
- 1 teaspoon Rubbed Sage
- 1 1/2 teaspoons Cayenne Pepper
- 3 Tablespoons Smoked Paprika
- 2 Tablespoon Chili Powder

Mix all the ingredients in a bowl and get ready to Rub your Chicken!

Take the Rub and Rub liberally onto the Chicken Breasts and Quarters. Makes sure to Rub both sides…we don’t want any jealous chickens! I take a sheet pan, lay out the chicken and coat. Let stand for 20 minutes before grilling.

Heat your Charcoal and get ready for some fun BBQ Time!
If you don’t have a chimney starter go and get one! This simple device uses paper — most commonly newspaper — to light the coals, which are held within the confines of a metal cylinder. The coals sit above the flames, so the edges light quickly and help ignite neighboring coals. NO NEED FOR LIGHTER FLUID WITH THIS BABY!
Light a full chimney of charcoal and pile the lit coals on either side of the grill, leaving a space in the center without coals. Place a foil pan with hot water in this empty space, this will to help regulate temperature and add moisture chicken.

And soak your wood chips, you can use hickory, mesquite, maple or your choice. I like the mesquite for chicken myself, but it’s your call!
Furthermore (Wood Chips – About the size of coins, chips are also common and easy to find. They burn quickly and you may find that you need to add them more than once during the cooking cycle. Chips are fine for short cooks, but for long cooks, chunks are better. This is a short cook so go with the wood chips)

And once your grill is up to temp, add your wood chips…

Now let’s Smoke that Chicken – Consistent temperature is the key to smoking. The ideal temperature range for most smoking is 225°F to 250°F. Use a meat thermometer to gauge your temperature if your grill doesn’t have one built in. If your temperature is above 250°F, close down the vents to reduce the amount of oxygen in order to reduce the temperature. If your temperature dips below 225°F, open up the vents fully to allow more oxygen in to increase the temperature. Easy Smoked BBQ Chicken Recipe

Keep checking the temp, but don’t PEEK! Let as much smoke flavor the chicken as possible. If you start to see less smoke, feel free to add more wood chips as you go. It’s OK to peek if adding wood chips! The chicken will take 1 1/2 to 2 hours to smoke just make sure the chicken is 165 degrees Fahrenheit and you are ready to eat!

Ohh the smell and taste of Smoked Corncob…a must add to your BBQ chicken! And for this we are going to grill NAKED!
Finally Shuck and clean corn. Don’t worry about getting every last stray piece of silk—they’ll burn away on the grill anyway. Place the corn directly over your hot grill (if the fire is gone from smoking add more charcoal with the lid off and get it HOT), turning occasionally, until charred and cooked through, about 10 minutes total. Roll that corncob in butta and yep you guessed it, smoky, nutty, YUM!

Love that CRISP FLAVORED SKIN that flakes off when you take it off the grill!
