Baba Ganoush Recipe Eggplant Recipes – A Middle East Favorite! Whenever I am overseas, this is my go to street food! Why not bring it home to the good ol’ U.S. of A! Come with me to the Middle East and experience amazing street food. Oh, and by the way, it is healthy! Don’t worry, it doesn’t taste healthy!

Baba Ganoush Recipe Eggplant Recipes
You will need:
Ingredients:

2 medium/large eggplants (you want the eggplant to feel light, and firm to touch)1 Medium Onion1/4Cup Parsley1/2 cup TahinaJuice from 1-2 lemons1-2p garlic cloves, CrushedSalt to tasteBlack pepper to taste1/4 tsp Paprika1 tsp Extra Virgin Olive Oil for brushingOptional 1/4 tsp Cayenne pepper

Directions:
1. Cut the top and the butt off of the eggplant, then cut in half and place on baking sheet skin side up. Brush each side with Olive
oil.
2. Heat oven to 400 degrees. Bake eggplant for approximately 20-30 minutes or until tender.
Take out and put the eggplant into bowl and cover or place in a plastic bag and let sit for 20 minutes or until cooled.

3. Once the eggplant has cooled peal the skin off or scoop the pulp out.

4. Chop the Onion and Parsley.
5. Combine the remaining ingredients with the eggplant, onion and parsley in to a food processor or blender
and mix until the dip reaches a smooth consistency. If it seems too thick, add a few tablespoons of water (one at a time) until you get the desired consistency.
6. Before serving garnish with fresh parsley or mint, drizzle with olive oil and Za’atar.

Baba Ganoush Recipe – Serve with olives, pita bread and tomato slices. This is a dish that can be served by itself or as an appetizer.
