Roast Pork Loin Recipes Easy Meal Recipe Dinner Ideas
Ingredients-
Roast Pork Loin:
- 2-4 Lb Pork Loin Roast
- 3/4 Cup Celery – Large Chop
- 3/4 Cup Carrots – Large Chop
- 1 Cup Yellow Onion – Large Chop
- 1 Tbsp Rosemary – Finely Chopped
- 1/2 Tbsp Thyme
- 1 1/2 Tbsp Dijon Mustard
- 1/2 Tbsp Sniders Steak Seasoning
- 1/2 tsp Black Pepper
- 2 Garlic Cloves – Finely chopped
Roasted Potatoes:
- 3 lbs Small Red Potatoes
- 1/4 Cup Extra Virgin Olive Oil
- 1 1/2 tsp Celery Salt
- 4 Garlic Cloves – Thinly Sliced
- 1/2 Cup Parsley – Chopped
- 1 tsp Black Pepper
- 3 tsp Paprika
Asparagus:
- 1 Bunch Asparagus
- 1 Tbsp Olive Oil
- Salt & Pepper to taste

Roast Pork Loin
Add Olive Oil to Saute’ Pan on Med Hi heat, brown all four sides,
Saute’ the non fat side first, brown the 2 sides, then end with the fat side up.
Apply mustard and rub to the pork loin, add vegetables and remaining garlic to pan and place in oven. Roast at 375 degrees for 30 minutes, turn up the heat to 400 degrees and place potatoes in oven. Roast pork loin until internal temperature reads 155 degrees Fahrenheit.
Place pork loin on cutting board to rest for 10 minutes. Let potatoes finish. While the potatoes are finishing and pork is resting, take saute’ pan with remaining juices, add white wine and let reduce in half, add 3 Cups chicken stock and simmer for 10 minutes. Strain vegetables out of liquid and put liquid back into pan. Add an additional cup of stock and heat on Med Hi heat, add 1/2 tsp Sea Salt and 1/2 tsp Black Pepper. Slowly stir in your slurry. Let simmer for one minute, let sauce thicken and remove from stove.

Roasted Red Potatoes
Wash your potatoes and cut in 4ths, place in a large bowl.
Add remaining ingredients and mix together until potatoes are well coated. Place on a sheet pan.

Asparagus
Cut the stems off, then cut remaining in half. Saute’ 1 Tbsp Extra Virgin Olive Oil in a saute’ pan. Salt and Pepper to taste.
