
BBQ Chicken Tacos Recipe

BBQ Chicken Tacos Recipe – BBQ Chicken, Check. Smoked Corn, Check. Now to make it ROCK…BBQ sauce and Feta Cheese CHECK! An easy, super good Taco with some green, that is Finger Lickin Good!
First of all you can make the chicken from scratch (see my recipe here) or this is great for your leftover BBQ Chicken from the weekend! Add some home made BBQ sauce and yep SUPER GOOD!
Ingredients:
- 1 1/2 Tbsp Olive Oil
- 5 chicken leg quarters (leg and thigh)
- 4 diced Roma tomatoes
- 1 can Black Beans
- 1/2 cup salsa (made from scratch or chunky style from the jar)
- 3 oz Feta cheese
- 4 Whole Smoked Corn (Kernels cut off the cob)
- 1/2 cup Fresh chopped Spinach
- 2 Tbsp Reilly’s Home Made BBQ Sauce or your own
- Sea Salt and Pepper to taste

BBQ Chicken Tacos Recipe – Take the left over bbq chicken and lay them out on your MEAT cutting board. You can chop or shred the meat off the bones and cut into bite size pieces. (I take the skin off before and only use the meat for tacos, but I know there are Skin Lovers out there so keep it on if ya like!)
So if you are starting from scratch, (see my recipe here) or smoke and grill your chicken until 165 degree internal temperature the way you like it.

In addition heat 1 Tbsp of Olive oil in a large saute’ pan on med-high heat, add chicken and brown for about 3 to 5 minutes until the chicken is heated through and has a little crispness. Add 2 Tbsp of BBQ sauce. Mix thoroughly, take off heat and set aside.

Drain the black beans and add to a sauce pan and 1/2 cup of your favorite salsa heat over med heat until hot. Add sea salt and black pepper to taste.

And then slice the kernels off the smoked corn cobs and place into a saute pan with 1/2 Tbsp olive oil. Heat through until hot. (No smoked corn, you can add a drained can or frozen corn instead.)
BBQ Chicken Tacos Recipe

Finally chop the spinach and dice the tomatoes!
Heat up your flour tortillas on the grill and load up with the Chicken, Smoked Corn, Tomatoes and spinach. Top with Feta cheese and add some hot sauce and BBC sauce and enjoy! Garnish with Black Beans or on the side.
