15 Bean Soup Recipe
Ingredients
- 20 oz. bag of 15 bean soup
- 1/2 Tbsp minced garlic (Add more garlic if you are ‘garlic lovers’ like us!)
- 1 Cup chopped celery
- 1 Cup diced carrots
- 2 Cups chopped leaks
- 1/2 Cup chopped parsley
- 1 Ham shank or hock (We are using our left over Holiday Ham shank)
- 2 Tbsp olive oil
- 5 Cups chicken broth
- 1 tsp chili powder
- 1/2 tsp turmeric
- 1/2 tsp black ground pepper
- Celery or Sea Salt to taste – the ham shank is salty by itself, so taste first before adding salt.

Take your raw beans or a 15 bean packet from the store. Rinse before using.
Place rinsed beans in a large pot, cover with 8 cups of water. Allow beans to soak overnight, or 8 hours.
After soaking, drain water.

Place beans in a large soup pot and add 10 cups of water. Bring to a rapid boil, reduce, cover and continue boiling for 1 hour and 20 minutes. Take off of heat.

Take a ladle, skim the liquid off of the top and discard, until your each the beans. Scoop beans and remaining liquid out of pan and set aside in a separate bowl.

In a large soup pot, add olive oil, minced garlic, leaks, carrots and add celery. Saute’ 3-5 minutes on med-high heat until translucent.

Add chicken broth and ham shank (with a little bit of meat left on the bones) turn down heat and let simmer for 20 minutes.

Take shank out of liquid, add beans back into the pot, when the beans are ‘finishing’, slice the ‘extra’ meat off of the shank and dice, add to pot. Add chili powder, turmeric and pepper. Remember, taste first before adding any salt, as the ham is salty by itself. Let simmer for another 10 minutes, until all of the flavors are combined and beans are cooked through.

Add parsley right before serving.
