Country Style Rib Tacos WAWAWEEWA- I don’t always smoke country style ribs, but when a super market has it at $.77 per pound I do…and then I have LEFTOVERS! Stay hungry my friends!

Country Style Rib Tacos

So you smoked too many ribs…NEVER! Here is a way to take your smoked country style ribs and turn them into a leftover recipe only Chefs dream about!

Country Style Rib Tacos

Ingredients

  • Left over or fresh Country Style Ribs (2 Lb)
  • 1/2 cup chicken stock
  • 1 Cup Yellow Onion, diced or sliced
  • 1 Tbsp diced Garlic
  • 1 Tbsp Olive Oil
  • 1/2 Cup sliced Black Olives
  • 1 Cup Baby Arugala
  • 1 Cup fine diced tomato (2 med. Roma tomatoes)
  • 1  15. oz can of your favorite Green Enchilada Sauce (Or you can make it from scratch!)
  • 3 Tbsp Shredded Cheddar Cheese
  • A little Texas Pete LOVE!

  • Take a saute’ pan, cook onions, garlic and saute’.  Add green enchilada sauce, cooked ribs and chicken stock, cover, and simmer.

  • Simmer for 20 minutes until rib meat flakes off the bone.

  • Take rib meat and bones out of the pan, and peal meat off the bone.

  • Simmer sauce, then strain sauce in a shinwa, or strainer, and return back to pan.

Country Style Rib Tacos

  • When ready, take white corn tortillas and heat up on med heat. Top with our smoked pork country rib meat, add arulgula, diced tomatoes, olives and top with hot sauce.
  • Heat up re-fried beans or make your own.
