Leftover Recipes Prime Rib Sandwich Easy Dinner Ideas Recipes – You can make this for light eaters or double the recipe to make them for family and friends! It’s a great way to utilize any left over prime rib or roast beef. This is a quick one, so it won’t be as picture packed as my other posts.

Leftover Recipes Prime Rib Sandwich Easy Dinner Ideas Recipes
You will need the following ingredients:
- 8 oz leftover shaved prime rib or roast beef
- ½ small yellow onion diced
- 2 tablespoon olive oil
- 3 russet potatoes
- Nacho Cheese Sauce (You can use a can or make it fresh)
- 1 teaspoon Season All
- 1 ½ Teaspoon Cajun Seasoning
- 1 Baggett or sub roll
- Frying oil
Left Over Prime Rib Recipe Cheese Steak Fries

Directions:
- Wash and cut the potatoes into the desired French fry size and soak them in water. To make thick French fries, slice potatoes lengthwise into 1/4-inch slices, and cut again into 1/4-inch strips.
- Heat up the nacho cheese sauce and set aside.
- Heat up the deep fryer to 375 degrees.
- Drain potatoes and dry thoroughly with a towel or paper towel. Heat up your grill to medium heat and preheat your oven to 400 degrees.
- Carefully add potatoes to oil in small batches so as not to lower the temperature of the oil. Cook for 4 to 5 minutes, turning occasionally. They will not take on much color at this point. Take out and put the fries on a paper towel and continue with the rest of the fries until all are cooked.
- French fries need to be fried a second time: Fry until crisp and golden, about 2 to 3 minutes. Remove from oil, and drain again on to the paper towel. Sprinkle with salt and pepper or kick it up with Cajun seasoning.
- Take the leftover prime rib or roast beef and slice paper thin.
- Heat oil in saute pan and saute onion until translucent.
- Add the prime rib or roast beef to the onion mixture and heat through.
- Cut the baguette or sub sandwich roll and spread the nacho cheese sauce on both sides (as much as you want).
- Layer the Prime Rib and onion mixture in the roll.
- Add a little extra cheese sauce to dip your perfect fries in and tell your stomach, “You can thank me later!”
