Tortellini and Chicken Sausage Reilly Style
Here’s a quick recipe that requires minimal effort but tastes incredible!
This post won’t be as image-heavy as my others because it’s just a fast little recipe but trust me, you have to try it!
Tortellini and Chicken Sausage Reilly Style
You will need the following ingredients:
1 16oz Package of fresh or packaged three-cheese Tortellini (or your choice)
1 Lb chicken hot sausage (med or mild will work too)
1 Small Onion
1 cup fresh shredded Asiago cheese
½ cup shredded Parmesean cheese
3 cups chopped fresh spinach
½ teaspoon salt
¼ teaspoon pepper
4 sliced garlic cloves (add more if you like garlic)
¼ cup capers
1/2 cup white wine
1 cup chicken stock
¼ cup chicken stock for slurry
¼ cup cornstarch for slurry
Directions:
First, you must cook the chicken sausage in a saute pan on medium high heat. Cook until the sausage has browned. Then you add the olive oil to the chicken sausage pan. Insert the garlic, onion, and spinach. Add the salt and pepper. Saute for three to five minutes.
Add the white wine and reduce heat to medium low for 3 minutes. Then add the chicken stock and continue to heat through.
While your ingredients heat on the stove, make a slurry with equal parts cornstarch and chicken stock. Whisk for about 2 minutes to thicken the sauce.
You will then bring a large pot of water to a boil. Add the tortellini and cook until tender, about 10 minutes.
Drain the tortellini, but do not rinse, then pour them into the saute pan with the sauce.
Add the Asiago cheese and capers. Stir to coat and mix the cheese.
Garnish with the shredded Parmesan cheese and you’re finished!
