
Grilled Marinated Chicken with Saffron Cream Sauce

Grilled Marinated Chicken with Saffron Cream Sauce…Ya had it and wait, it’s winter. Not So Fast! Living in Arizona has it’s perks and grilling in January is one of them. How about adding a little flavor to that chicken thigh…with a Saffron Cream sauce. Ok…I’ll try that!!!
Grilled Marinated Chicken with Saffron Cream Sauce
Grilled Marinated Chicken with Saffron Cream Sauce recipe, you will need the following:
- 4 to 6 chicken thighs (skin on)
- Fresh Pickled Vegetables (your call on how much you want)
Beer Marinade for the Chicken
- 1 can or bottle of your favorite beer (dark or light your choice)
- 1 tsp thyme (fresh or dried)
- 1 tsp rosemary (fresh or dried)
- 1/4 cup apple cider vinegar
- 2 Tbls Olive Oil
- Black pepper and sea salt to taste
- 1 tsp sea salt (or to taste)
Saffron Cream Sauce
- 2 Garlic cloves finely sliced
- 1 Tbls. olive oil
- 2 Tbls. Saffron or (Safflower is the less expensive version)
- 1 pinch of Saffron or Safflower for garnish
- 1 cup white wine
- 1 cup heavy cream

1. Take all the marinade ingredients and whisk them together in a large bowl or zip lock bag. Add the chicken to the marinade and marinate for at least 1 hr or overnight. (I marinate for 12 to 24 hours to really get the flavor).
2.Preheat grill to medium high heat. Add chicken to grill and cook, turning over until cooked through, about 5-6 minutes on each side. (Watch the grill…with the skin on the chicken it can burn easy)!
Saffron Cream Sauce time…
3. Add the Olive Oil to a sauce pan over med high heat…

4. Saute the sliced garlic for a minute, stirring so you don’t burn the garlic.

5. Add the white wine, Saffron or Safflower, and bring back to a boil.

6. Reduce the white wine by half.

7. Add the Cream, salt and pepper, lower the temp to med and simmer for an additional 4 to 5 min until desired thickness. Take off heat and serve with the cooked Grilled Chicken.

8. Plate and serve with the Pickled Vegetables.

I’m telling you…Your entire family will love this. Gourmet chicken just arrived to your kitchen…Ooh Yeah!
