Portabella Mushroom With Chicken
Ah Come’ on Mom Chicken again! Yep but this time Johnny we Kick it up a notch or two…Portabella Mushroom Chicken with Spinach Orzo and Provolone Cheese. Ok…I’ll try that!!!
For this recipe, you will need the following:
Chicken and Portabella Mushrooms:
- 3 Chicken Breasts (skinless)
- 1 pint baby Portabella Mushrooms
- 4 Tbsp. Balsamic Vinegar
- 3 Tbsp. Olive Oil
- 4 cloves of garlic (sliced thin)
- Sea Salt and pepper
Sauce:
- 6 oz Chicken Demi-Glace from scratch (or More Than Gourmet 1 1.5oz reconstituted)
- 4 Tbsp. Chicken Stock (used to reconstitute Chicken Demi-Glace)
- 1 Shallot or 2 Tbsp.
- 1 tsp Black Pepper
Orzo:
- 1 cup Orzo (Dry)
- 1 tsp olive oil
- 1 Red Bell Pepper
- 3 Cups Fresh Spinach
- 2 tbls Olive Oil
- 1/2 cup Chicken Broth
- Sea Salt and pepper to taste

1. Salt and Pepper the chicken breast. Pre -Heat your sauté pan to Med High and sauté 5 minutes a side or until browned.
2. Wash and de- stem the baby Portabellas…

…Marinate the portabella mushrooms in the Balsamic Vinegar with a pinch of salt.

…Slice the garlic thin or leave them thick, your call on this one.
3. Pre- Heat oven to 350 degrees. Add garlic and marinated Portabella’s to the chicken and place pan in the oven. Cook for 25-30 minutes or until cooked. Internal temperature of 165 degrees.
4. Finely chop the shallots. Pre – Heat sauce pan to Med heat…
…Add 1 tbls. olive oil and sauté shallots until translucent.
5. Add the 6oz Chicken Demi-Glace simmer for 10 minutes
6. Pre – Heat sauté to Med heat…
…Add the Red Bell Pepper.
…and Spinach.
…sauté for 4 minutes or until spinach has wilted.
7. Add the cooked orzo and 1/2 cup chicken stock and cook while mixing together for 2-3 minutes or until the orzo is finished cooking. (Orzo can be boiled for 7 minutes. Drain and add orzo to the spinach and red bell pepper mixture).
8. Add a few portabella mushrooms, garlic and 2 pieces of provolone cheese to each chicken breast. Return sauté pan to oven and melt cheese for a few minutes.

9. Plate and garnish with a few Portabella Mushrooms and garlic with the Demi – Glace. Parmesan Cheese (Optional).
